Bread
Ingredients:
Flour:
200 g bread flour
50 g cake flour (self-rising flour)
Or
120 g plain flour
130 g bread flour
Or
200 g plain flour
50g cake flour
Either option will work. I have tried!
3 g instant yeast
160 g fresh cold milk
2 g salt
35 g sugar
40 g unsalted butter
1. Mix flour, yeast, salt, sugar, and milk using chopstick
2. Add in butter. Knead the dough until the dough is elastic and smooth. You can do it by hand or electric mixer. I usually do it by hand, and it takes me about 20 mins to get an elastic dough. To check whether you dough is ready, you can pinch off a small piece of dough, then stretch the dough by approx. 3-5 cm, if the dough forms a thin membrane and stretches without breaking, then your dough is ready.
3. Leave the dough in a container and cover with cling wrap, let it rise up to double size. This depends on the temperature of your kitchen. If it's warm enough, then it will take short time (45-60 mins). It may go up to 2 hours. I learnt from a friend --> usually I put the dough inside microwave with a cup of hot water. This will make the temperature inside the microwave a bit warm, therefore it helps the dough to rise faster. Here is how it looks like after about an hour.
4. Punch the dough with your fist to get rid of the air. Then divide the dough into small balls, each weights about 30 g, depends on how big you want it to be. You will be able to get about 16 rolls. Then leave it for 10 mins before you shape your bread, and put the filling.
5. After you fill and shape, leave it rise for the second time (about double size). This might take about 30 mins.
6. Glaze with beaten egg, and spread some sesame seed on top.
7. Set oven temperature to 200 degrees celcius. Bake the bread for 8-10 mins.
Yam Filling:
Steamed fresh yam for about 30 mins, then mash it. Boil small amount of coconut milk then add the mashed yam and add sugar to your taste. Be careful with the amount of coconut milk that you use, if it's too liquid like, you will have a hard time to shape your bread.
