Charcoal Bread (one loaf)






Ingredients:
220 g bread flour
58 g cake flour
2g charcoal powder
20 g sugar
3 g yeast
3 g salt
180 g cold milk
25 g unsalted butter

Procedures:
1. Mix flour, yeast, salt, sugar, and milk using chopstick
2. Add in butter. Knead the dough until the dough is elastic and smooth. You can do it by hand or electric mixer. I usually do it by hand, and it takes me about 20 mins to get an elastic dough. To check whether you dough is ready, you can pinch off a small piece of dough, then stretch the dough by approx. 3-5 cm, if the dough forms a thin membrane and stretches without breaking, then your dough is ready.

3. Leave the dough in a container and cover with cling wrap, let it rise up to double size. This depends on the temperature of your kitchen. If it's warm enough, then it will take short time (45-60 mins). It may go up to 2 hours. I learnt from a friend --> usually I put the dough inside microwave with a cup of hot water.
Since I don't have a microwave anymore, i usually pregeat my oven at 150 degree for 1 mins, then open the oven door and let it cold down for a bit. Then place the dough inside the oven, if the oven is still too warm, slightly open the oven door. 
4. Punch the dough with your fist to get rid of the air. Shape the dough like a big oval and place it in the bread loaf pan. Let it rise for another an hour.
5. Preheat oven 200 celc. Bake it for 20 mins.

Pumpkin Bread Loaf





Ingredients:
150g mashed pumpkin
280g bread flour
4g yeast(3/4tsp)
3g salt
20g honey
30g milk
30g butter
50g egg(1egg)

Steam pumpkin for 10-15 mins(until soft) then mash with fork. 

Procedures:
1. Mix flour, yeast, salt, honey, egg, mashed pumpkin, and milk using chopstick
2. Add in butter. Knead the dough until the dough is elastic and smooth. You can do it by hand or electric mixer. I usually do it by hand, and it takes me about 10-20 mins to get an elastic dough. To check whether you dough is ready, you can pinch off a small piece of dough, then stretch the dough by approx. 3-5 cm, if the dough forms a thin membrane and stretches without breaking, then your dough is ready.

I learnt a new technique, by placing the dough inside a warm oven that was preheated for 2 mins at 100 celcius. It takes less than an hour for the dough rise. 



4. Punch the dough with your fist to get rid of the air. Then flatten the dough, and roll the dough, like rolling swiss roll cake. 


5. Grease a loaf pan with about 1/2 tablespoon of vegetable oil. Place the rolled dough in the pan and cover with cling wrap. Then let it rise for the second time. You may place it inside the warm oven again. This may take about 40 mins.
6. Set oven temperature to 200 degrees celcius. Bake the bread for 18 mins. 
7. Let it cold before you slice it. You may keep the bread in freezer to keep it fresh. Whenever u want to eat, take out few slices and let it rest to room temperature. Your bread will still remain soft like a fresh one.

Healthy Chocolate Bread
After few months break of baking, I decided to use my oven again. I didn't realize that I am out of sugar at home. But, I know that I have various honey (Manuka, raw honey, Yummy house honey etc) available. Since, I was too lazy to go out to supermarket to get sugar, so I thought why not give it a try to substitute sugar with honey.
It's going to be a healthy one for sure. But, I do have small doubt whether it's going to work. This chinese idiom then give me a complete confidence:
 用心做的東西肯定會是最好的!
Meaning: If you put your heart into doing something, you will definitely get the best out of it!

Below is my new innovative recipe. It worked!

Recipes:
375 g Bread Flour
9 g Choco powder
4 g Instant Yeast
3 g salt
200 g fresh milk
65 g honey water (mix 3 tablespoon of honey and half cup of water)--> only use 65 g of the mixture
52 g butter

The procedure is similar to that for making Yam Bread (please see my other post for Yam bread).

Chocolate filling:
2-3 tablespoon whipping cream
6 tablespoon baking dark chocolate chips

Heat the whipping cream in microwave or on top of stove, after it boils, transfer to a container and mix the chocolate in, stir it until it's well blended. Put aside.
